Large quantity of chopped vegetables, including onion 1 Tin plum tomatoes Garlic Ground ginger Ground coriander Garam masala Chili powder Ground fenugreek Curry powder Vegetable stock cube Dried or fresh mint Put onion and garlic in a large pan with a little olive oil. Fry until onions begin to soften Add remaining spices to the onions and fry for 2-3 mins, then add the dried herbs Add vegetables in order of the time they take to cook (leaving mushrooms until after the next step if you are using them) Add a vegetable stock cube and stir in the tinned tomatoes, then the fresh herbs and simmer until the sauce has thickened. Serve with the rice
