Hot Cranberry Toddy

  • 1 1/2 Litres cranberry juice
  • 100g sugar  
  • 60ml lemon juice  
  • 500ml water  
  • 3  x  2.5cm strips lemon peel 7.5cm cinnamon stick 
  • 1 tsp whole cloves  
  • 15cm square piece cotton cheesecloth
  • 90ml rum
  1. Combine cranberry juice, sugar, lemon juice, and water in a large saucepan
  2. Tie lemon peel, cinnamon, and cloves in cheesecloth. Add this spice bag to saucepan. Bring just to boiling point, reduce heat and simmer covered, for 10 minutes.
  3. Discard spice bag. Add rum and serve.
