  • 375g plain flour, sifted
  • 1 tsp baking powder, sifted
  • 1/2 tsp salt, sifted
  • 225g butter, softened
  • 300g white sugar
  • 2 eggs
  • 2 tsps vanilla extract
  1. In a large bowl, cream together the margarine and sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla.
  3. Gradually blend in the sifted ingredients until fully absorbed.
  4. Cover dough, and chill for 2 hours.
  5. Preheat oven to 180 deg C. Grease baking sheets or line with greaseproof paper.
  6. On a clean floured surface, roll out small portions of the chilled dough to 1/4 inch thickness. Cut out shapes using biscuit cutters and place on baking sheets.
  7. Bake for 6 to 8 minutes in the preheated oven, or until edges are barely brown. Remove from baking sheets to cool on wire racks.
  8. When cool decorate as required with icing and sweets.
