Something a bit fishy

85g couscous 160ml orange juice 1lb cooked salmon 10oz package frozen chopped spinach - thawed, drained and squeezed dry 2 egg yolks, beaten 2 cloves garlic, crushed 1 tsp ground cumin 1/2 tsp ground black pepper 1/2 tsp salt 3 tbsps olive oil Make couscous as package directions using orange juice instead of water. In a mixing bowl, combine the cooked couscous, salmon, spinach, egg yolks, garlic, cumin, pepper, and salt. Form into patties. In a large frying pan over medium heat, heat the olive oil and fry patties until golden brown turning once. Serve with garlic mayonnaise.
