235 ml chicken soup 235 ml tomato frito 6 slices bacon 2 onions, diced 185 g uncooked white rice 2 tomatoes, diced 2 green bell peppers, diced 1/2 tsp chilli powder 1/2 tsp salt and pepper 1 can sliced black olives 1 can sweetcorn Gently heat chicken broth and tomato frito to boiling point. In a large frying pan over cook bacon until evenly brown. Chop bacon, and set aside, reserving the bacon fat. Add onion to pan and saute until tender. Stir in rice, and cook until lightly browned, 3 to 5 minutes. Pour in boiling chicken and tomato mixture. Add tomatoes, peppers and spices and simmer for 30 to 40 minutes. Stir in drained olives and sweetcorn.
