Spice it up with marinades Marinades are an easy way to add  flavour and to moisten or tenderize meat and fish. They can be sweet, spicy, fruity or fragrant to suit your taste.

Whatever your choice, place the food in a non-metallic dish, pour over the marinade, stir and leave in the fridge for at least ½ hour. Remove from marinade and BBQ as normal, discard the marinade.

Mediterranean Marinade for lamb, pork, chicken or fish
3 tbsp olive oil
Juice of 1 lemon
2 crushed garlic cloves
1 large onion, grated
1 tsp dried oregano

Lime & Ginger Marinade for Salmon and Prawns
zest and juice 1 lime
15g fresh root ginger, peeled and grated
3 x 15ml spoons clear honey
2 x 15ml spoons sesame oil

Pul-Kogi Beef (Korean)
6 cloves garlic, minced
½ pear - peeled, cored and minced
2 green onions, thinly sliced
4 tbsps soy sauce
2 tbsps white sugar
1 tbsp sesame oil
1 tbsp rice wine or sherry
1 tbsp sesame seeds
1 tsp minced fresh ginger

Teriyaki Marinade for All Types of Meat
80 ml water
50 g brown sugar
80 ml soy sauce
1 tsp crushed garlic
1/2 tsp ground cinnamon
