Marinades are an easy way to add flavour and to moisten or tenderize meat and fish. They can be sweet, spicy, fruity or fragrant to suit your taste. Whatever your choice, place the food in a non-metallic dish, pour over the marinade, stir and leave in the fridge for at least ½ hour. Remove from marinade and BBQ as normal, discard the marinade.
