225g couscous 1/2 red onion 1 tbsp olive oil 2 tomatoes, cut into wedges 100g sliced mushrooms 1 tbsp pine nuts 80ml white wine handful of chopped herbs 2 large peppers, halved and de-seeded Preheat oven to 190°C/375°F. Prepare the couscous according to the packet but using vegetable stock instead of water. Fry the onion in olive oil. Add the tomatoes, mushrooms and pine nuts. Pour in the wine, and herbs and season. Sprinkle over couscous. Stuff pepper halves and bake for 20 minutes. Vegetarian friendly
