Lemon Stuffing Balls

  • 1 tbsp vegetable oil
  • 4 rashers of bacon, chopped
  • 1 onions, finely chopped
  • 225g fresh breadcrumbs
  • 10g fresh parsley
  • 5 sage leaves
  • 5 sprigs of thyme, leaves removed
  • Juice and grated zest of 1 lemon
  • 1 egg
  • 125g melted butter
  • 1/2 tsp Dijon mustard
  1. Saute bacon and onion in oil until translucent
  2. Put breadcrumbs into a large bowl and stir in the bacon and onion.
  3. Put parsley, sage, thyme and lemon zest and juice into a blend and puree to a smooth paste
  4. Add herb puree to breadcrumb mix along with egg, butter and mustard and mix well.
  5. Roll into 1" round balls and bake for 30 minutes at 180 deg C
