- 1 tbsp vegetable oil
- 4 rashers of bacon, chopped
- 1 onions, finely chopped
- 225g fresh breadcrumbs
- 10g fresh parsley
- 5 sage leaves
- 5 sprigs of thyme, leaves removed
- Juice and grated zest of 1 lemon
- 1 egg
- 125g melted butter
- 1/2 tsp Dijon mustard
- Saute bacon and onion in oil until translucent
- Put breadcrumbs into a large bowl and stir in the bacon and onion.
- Put parsley, sage, thyme and lemon zest and juice into a blend and puree to a smooth paste
- Add herb puree to breadcrumb mix along with egg, butter and mustard and mix well.
- Roll into 1" round balls and bake for 30 minutes at 180 deg C
